The Best Creamed Spinach Ever!

Delish!!

INGREDIENTS
1 Layer of Butter Flavored Pam
1 small onion, chopped (if you got 'em)
2 cloves garlic, minced (Trader Joe's sells crushed garlic cubes. I use 4)
2 pounds fresh spinach, washed and chopped (yeah, right - frozen chopped say 1.5 bags...depending on how creamy you want it)
1 (12 ounce) package Lite Silken Tofu (Meijer sells it in the produce section)
2/3 cup milk or soy milk
1 cup Parmesan or Asiago cheese
salt and pepper to taste

DIRECTIONS
Heat Pam in a large skillet over medium heat. Stir in onion and garlic; cook until soft and translucent, but not brown. Add spinach; cook, stirring frequently, until wilted (aka thawed).
Place tofu, milk, cheese, garlic powder, salt, and pepper in a blender, and puree until smooth.
Stir pureed tofu into spinach. Cook until warmed through. Adjust seasonings, if desired, and serve.
